Masala Chickpea Toast (Protein-Packed Breakfast)

🥘 Ingredients

  • 1 can (15 oz) Canned chickpeas, drained and rinsed
  • 4 slices Whole grain bread slices
  • 1/2 Medium onion, finely chopped
  • 1 medium Tomato, finely chopped
  • 2 Garlic cloves, minced
  • 1 tsp Fresh ginger, grated
  • 1/2 tsp Cumin powder
  • 1/2 tsp Coriander powder
  • 1/4 tsp Turmeric powder
  • 1/4 tsp Red chili powder (adjust to taste)
  • 1/4 tsp Garam masala
  • to taste Salt
  • 2 tbsp Olive oil
  • 2 tbsp Fresh cilantro, chopped
  • 1 tbsp Lemon juice
  • pinch Chat masala (optional)

📝 Instructions

  1. Roughly mash the chickpeas in a bowl, leaving some chunks for texture (don't make it completely smooth).
  2. Heat 1 tbsp oil in a pan over medium heat. Add onions and cook until translucent (3-4 minutes).
  3. Add garlic and ginger, cook for another minute until fragrant.
  4. Add tomatoes and cook until softened (2-3 minutes).
  5. Add all the dry spices (cumin, coriander, turmeric, chili powder, garam masala) and cook for 30 seconds.
  6. Add the mashed chickpeas, salt, and 2-3 tbsp water if needed. Cook for 5-7 minutes, stirring occasionally.
  7. Stir in cilantro and lemon juice. Taste and adjust seasoning.
  8. Toast the bread slices until golden brown.
  9. Generously spread the masala chickpea mixture on toast. Sprinkle with chat masala if desired.
  10. Serve immediately while warm. Garnish with extra cilantro if desired.
