Masala Chickpea Toast (Protein-Packed Breakfast)

🥘 Ingredients
- 1 can (15 oz) Canned chickpeas, drained and rinsed
- 4 slices Whole grain bread slices
- 1/2 Medium onion, finely chopped
- 1 medium Tomato, finely chopped
- 2 Garlic cloves, minced
- 1 tsp Fresh ginger, grated
- 1/2 tsp Cumin powder
- 1/2 tsp Coriander powder
- 1/4 tsp Turmeric powder
- 1/4 tsp Red chili powder (adjust to taste)
- 1/4 tsp Garam masala
- to taste Salt
- 2 tbsp Olive oil
- 2 tbsp Fresh cilantro, chopped
- 1 tbsp Lemon juice
- pinch Chat masala (optional)
📝 Instructions
- Roughly mash the chickpeas in a bowl, leaving some chunks for texture (don't make it completely smooth).
- Heat 1 tbsp oil in a pan over medium heat. Add onions and cook until translucent (3-4 minutes).
- Add garlic and ginger, cook for another minute until fragrant.
- Add tomatoes and cook until softened (2-3 minutes).
- Add all the dry spices (cumin, coriander, turmeric, chili powder, garam masala) and cook for 30 seconds.
- Add the mashed chickpeas, salt, and 2-3 tbsp water if needed. Cook for 5-7 minutes, stirring occasionally.
- Stir in cilantro and lemon juice. Taste and adjust seasoning.
- Toast the bread slices until golden brown.
- Generously spread the masala chickpea mixture on toast. Sprinkle with chat masala if desired.
- Serve immediately while warm. Garnish with extra cilantro if desired.
