Chole Masala (Chickpea Curry)

🥘 Ingredients

  • 2 cups Canned or soaked chickpeas (garbanzo beans)
  • 2 Medium onions, finely chopped
  • 2 Tomatoes, pureed
  • 1 tbsp Ginger-garlic paste
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1/2 tsp Turmeric
  • 1 tsp Garam masala
  • 1 tsp Chili powder (adjust to taste)
  • to taste Salt
  • 2 tbsp Oil
  • handful Fresh cilantro for garnish
  • as needed Lemon wedges for serving

📝 Instructions

  1. If using dry chickpeas, soak overnight and boil until soft (or use canned to save time).
  2. Heat oil in a pot, add onions and sauté until golden (5-7 minutes).
  3. Add ginger-garlic paste, cook for 1 minute, then stir in tomato puree and all spices. Cook until oil separates (about 10 minutes).
  4. Add chickpeas and 1 cup water. Simmer for 15 minutes until gravy thickens.
  5. Garnish with cilantro and serve with rice, naan, or as a standalone. Squeeze lemon for tang.
