Chole Masala (Chickpea Curry)
Protein powerhouse with ~20g per serving. Spicy, hearty, and beats takeout on cost and health.
🥘 Ingredients
- 2 cups Canned or soaked chickpeas (garbanzo beans)
- 2 Medium onions, finely chopped
- 2 Tomatoes, pureed
- 1 tbsp Ginger-garlic paste
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 1/2 tsp Turmeric
- 1 tsp Garam masala
- 1 tsp Chili powder (adjust to taste)
- to taste Salt
- 2 tbsp Oil
- handful Fresh cilantro for garnish
- as needed Lemon wedges for serving
📝 Instructions
- If using dry chickpeas, soak overnight and boil until soft (or use canned to save time).
- Heat oil in a pot, add onions and sauté until golden (5-7 minutes).
- Add ginger-garlic paste, cook for 1 minute, then stir in tomato puree and all spices. Cook until oil separates (about 10 minutes).
- Add chickpeas and 1 cup water. Simmer for 15 minutes until gravy thickens.
- Garnish with cilantro and serve with rice, naan, or as a standalone. Squeeze lemon for tang.
